Is it done?
Internal temp 200–205°F, or a skewer comes out with a few moist crumbs (not wet batter). Glass or ceramic pan? Add 15–20 minutes.
how to
- Heat oven to 350°F. Grease your pan; line a loaf pan with parchment if you've got it.
- Mash bananas in a big bowl until mostly smooth. Lumps are fine!
- Whisk in the melted butter, brown sugar, egg(s), and vanilla until uniform.
- In a separate bowl, whisk the flour, baking soda, and salt.
- Fold dry into wet with a spatula until just combined. Stop the moment you don't see dry flour — overmixing makes it tough.
- Scrape into the pan, smooth the top, and bake (see "bake it in," above).
- Cool in the pan 10 minutes, then turn out onto a rack to finish.
